In addition to four pounds of potatoes, you’ll need butter, olive oil, salt, shallots, and herbs. You’ll want a potato slicer handy, but if you don’t have one, use an incredibly sharp knife to cut the potatoes.

You’ll start out by slicing four pounds of potatoes. You’ll want to make sure they’re paper thin, as this will ensure they get perfectly crisp on the outside. Next, you’ll arrange the potatoes in a 9-inch baking dish, so that the potatoes form a continuous line. You’ll then brush the olive oil and butter mixture over the potatoes, and add the shallots. Pop the entire dish into the oven, then when it’s just about done, add the herbs and cook until perfectly crispy.
